Chia Breakfast Bowl for Spring

A healthy breakfast does not have to take long or be hard to make. As I have mentioned before, I am very slow in the mornings and I usually do some prep the night before to make my morning run a little more smoothly. This occasionally includes making breakfast. I am not always the greatest at getting omega fatty acids into my diet so from time to time I will make a chia breakfast bowl. This particular recipe is inspired by the warmth and renewal that spring brings each year and takes me no more than 10 minutes to make, clean up included!

CHIA BREAKFAST BOWL

Serves 2-4

Ingredients:

  • 1 can coconut milk

  • 1/4 cup chia seeds

  • 1 banana

  • Blueberries

  • Strawberries

  • Cinnamon

  • Maple syrup

Directions:

  1. Make a chia pudding by placing coconut milk, chia seeds, and banana into a blender and blending for 30-45 seconds.

  2. Place pudding in a container and refrigerate overnight.

  3. Wash and prep berries and place in a refrigerator overnight.

  4. Go to sleep.

  5. Place desired amount of chia pudding in a bowl. Garnish with berries, cinnamon, and sweeten with maple syrup if desired.

  6. Eat and enjoy a nutritious breakfast!
